What to do with a pig’s head

It’s not the most appealing portion of the pig to deal with, but there’s plenty of meat on a pig’s head and it would be a shame for it to go to waste.

First, we removed the ears. These are dried in a low oven overnight and made into treats for a very special dog.

Then you’re left with this – a rather gruesome sight and an opportunity to try and guess which of the pigs it belonged to.

Ok, I can’t pretend I had anything to do with this actual head, so I don’t know how long it spent in the oven, but when we next saw it it looked like this:
